FOOD: Strawberry and Apple Crumble Muffins
So its back to baking for this week's recipe.
I had some Strawberries and Apples to use up and wanted to try something new.
After a bit of internet searching, I found a recipe for Crumble muffins. I was immediately sold, two of my favourite things in one bake!
They also were not that hard to make, you can follow the recipe here on Taste.au.
As always, I used dairy free alternatives to Milk and Butter due to allergies.
So I made the crumble first and left it in the fridge.
I then chopped up what fruit I had, I had alot more apples, but there is still enough to get the taste of the Strawberries.
After you spoon the mixture into the cases, its time to add the crumble.
My cakes were done in about 15 mins, I made sure to check the mixture and not to accidently stab a bit of fruit.
They are great straight out of the oven, but a little delicate. I had to eat it with a spoon, but once they were cooled they are firm.
They are actually really tasty, I was worried that the crumble wouldn't be nice and crunchy, but I think its because it was made first and left to chill in the fridge that it gained the right texture when baking.
I also think that you can easily swap whatever fruit you want in, I'm thinking of doing a christmas take on it in December.
